Ages ago I shared one of Nigel Slater’s Christmas recipes – it’s only Christmassy because it has cranberries in it – I make it all year round!
Also, because there’s only me, I make a batch in the oven rather than on the hob and re-heat during the week. I love these with a jacket potato but I think they’d be great with rice too.
I get 3 meals out of a pack of 12 chipolatas but it depends how hungry you are 🙂
Putting a little oil in a roasting dish I add the sausages – you should remember to prick yours, I forgot! – then I added red onion and dried cranberries, raisins & sultanas, and, apple. I’d have put in apricot too had I had any in the cupboard, I think pork likes any fruit to be honest. As you’ll see from the photo the apple did burn slightly but it didn’t taste burnt so I ate it anyway!
I added a heaped tablespoon of cranberry sauce for added sweet stickyness, but I bet jam would work too.
I baked this at 190º for 40 – 45 minutes.
Of course this isn’t the only Christmas recipe I love all year round – yes I’m looking at you, mince pies!
